So I'm getting a ouachita map, and i was wondering what type of substrate do i use for plants and for my turtle not to be harm from accidentally eating it.

Sand would be a good choice.

Soil without fertiliser (top soil) is usually good. Triple check that it's written animal friendly on it and that there's no additives.
