My turt won't eat veggies!

I got my turtle from a friend about 4 months ago, and I'm pretty sure he only fed the turt feeder fish and commercial sticks.
After discovering all of the foods that the turtle should be eating on this site, I tried to start introducing romain lettuce and carrots.
He doesn't want anything to do with either, he only eats feeder fish, commercial sticks and cuttlebone.
Not to mention he bites at the thermometer all of the time, (which means hes hungry) and he won't stop until I feed him some sticks or cuttlebone.
Sometimes he wants to be fed twice a day, I know from reading on this site, that this is way to many commercial sticks.
Hes a full grown adult.
Does anyone have any suggestions on how to get him to start eating vegetables?

By the way, you don't have to limit his cuttlebone. Cuttlebone is an excellent source of calcium plus it keeps his beak trim and gives him something to bite! Just leave the cuttlebone pieces in the tank and let him snack on it when he feels like it.
