I kept crawfish in my tank with my turtle for awhile. Crawfish eat detritus, but unfortunately do not seem to enjoy turtle waste. They will eat excess turtle food.
I have found the reports that crawfish could potentially harm your turtle to be unfounded. That's not to say that it's impossible, but I have never seen it happen, and my crawfish was 4 inches long. RES prey on crawfish in the wild, so if you don't have a problem with your crawfish potentially getting eaten I don't think it's a bad idea. My turtle never ate a crawfish, but my crawfish did eat each other. Don't get more than one.
Anecdotally, I think crawfish are cute and fun to play with. They can come out of the water for a bit as long as their gills stay wet, so you can pick them up and hold them and stuff.
Basically all you can do for turtle waste is buy a good filter and get really good at changing out the tank water.
