I just have a quick question and wonder if anyone can help me out; as the subject says, my RES just laid eggs, and as I was marvelling at them, she bit one in half and then did the same to the other. After the initial shock, I wondered, will this affect the mother at all? Like, will having the embryonic remains enter her mouth make her sick, especially if she happened to ingest some?

No, it would actually be nutritious for her. Did she actually eat them or just bite them open? The eggs can't survive in water anyway. RES normally climb onto dry land and bury their eggs in the ground and then leave them.

Welcome to the forum. Your turtle might have more eggs to lay, so it would be good to build a nesting area for her. Or at least take her outside periodically (especially if you notice her getting restless in the tank and making digging motions with her hind feet) if you have an area where she could do some digging in to lay any more she might have.
