See, if they grow to fit the tank, and the tank is very large, I worry that this may be disrupting their natural growth process by speeding it up.

If they did grow to the tank, then to avoid disrupting their natural growth process, we would need to give them a big lake or river! The bigger the tank is the more it replicates their natural environment.

IMHO The more we can replicate the natural environment the better it will be for the turtle.

By the way, when I said the turtles would grow to fit the bigger tank, I didn't mean to imply that they would grow BECAUSE they were in a bigger tank. What I meant was, if the tank is bigger than it needs to be for their current size, don't worry about it because the turtles will continue to grow (as dictated by nature) and before you know it, the tank won't be bigger than it needs to be any more.

my guy is 5 years old and 6" long. when i got him he was about 4" and living in a 10 gallon. moved him to a 35 and then a 55, after the 2nd. move he started shedding and grew about an inch the first few months. he's slowed down now for a bit however i just moved him to 100 gallon and he's basking a lot lately so i'm thinking he's gonna grow.
