Water temperature changes, about 25-29'C depending on the weather. Usually between 27-29'C daytime, when it's bright and sunny outside. She gets plenty of shade during the day especially around midday.

I feed her turtle pellets; Reptomin and Hikari brand as her main food, which I dust with a little Tetra ReptoCal Calcium on alternate feeding times. About once a month I give her some carrots as treats.

The diet sounds good. Is she getting any veggies/aquatic plants?

No, she doesn't. Is it important to give her some? If so, what should I get her?
Are broccoli and water spinach a good choice?

Try to maintain a well balanced and varied diet. Plants should be a major part of her diet, see here: http://www.redearslider.com/plants.html
