Charlie seems to be hiding in a cave I made of bricks for him. He only comes out at night, and sleeps most of the day underwater in the "cave". Should I be worried?

It sounds like your turtle is shy. How old is Charlie? Younger turtles are usually more timid.
It also takes time for your turtle to develop trust aka associating their owners with food .
I've heard of nocturnal turtles so you shouldn't worry too much.
