Rosie reds are a once per month treat, so even though he loves them, don't overfeed them. Pumpkin should probably be boiled for like a minute in water in the microwave and then cooled before fed, like sweet potatoes. Lettuce, I only feed the dark green parts because my turtle isn't interested in anything else, so you can save yourself some time and only feed the darker greens.
So far I've fed:
rosie red minnows
freeze-dried crickets
pieces of cooked meats, like salmon, tuna, whitefish, chicken
lettuce - romaine, green leaf, red leaf, boston
blueberries
peeled grapes
carrots
cuttlebone
pellets - reptomin, hbh turtle bites, some turtle treat that I don't remember the brand
The list of things we've tried that didn't go over well:
tomatoes, zucchini, yellow squash, watermelon, orange
