Sounds like everything is normal to me.Turtles will eat there own poo because its not fully digested and they can get more nutrients out of it. Also if you have good filtration you will never see poo.

As for being hyper your turtle knows you and will go hyper cause you know you feed it. You probably dont see your turtle sleep cause hes sleeping when you do at night. Leave the room and poke your head in after awhile and see if hes calm. That somtimes doesnt work either. My turtles spot me and go crazy.

As for snapping, well thats normal too. Some turtle as they get bigger get a little snappy.

My turtles are reckless swimmer.. when they see me near to the tank they will swim and splish splash all the water around and clapping the water. If they can 'talk'.. for sure they like yelling.."Hey! I'm hungry!, don't you see us here?"

I think your turtle is normal. Maybe she a little bit hyper active like my turtles.. :D

My female snaps when she's not in the mood to be held or held too long. Sometimes she can be btretty docile, she'll let my pet her head without her tucking it back in. I handle them gently for about 10 minutes a day so they get comfy with me handling them. My male loves being held, he just kind hangs out until he misses my female and I put him back. I've also got three hatchlings that are getting more and more used to me being near them. They still associate me mostly as the person that feeds them, so they go nuts when I come near - especially if it's close to feeding time.

I painted the back of my aquarium Black, they do alot less of that "running" or swimming against the glass.
