I was just wondering about how "deep" the water should be for my little guys, they are about 1 1/2" long (from front/back of shell).

As much as you can without letting them escape and leaving enough room for the turtle dock and such.

Yeah, RES are aquatic turtles, and they have the instinct to dive/swim from birth, they will only drown if caught in something they cannot free themselves of, otherwise they can swim in deep waters indefinitely.
Hey hey hey.

Yeah and if you are really worried, you could just make sure that you have plants or something so they can climb up onto it when they want to poke their little heads out of the water.

Yea, my water is pretty deep so my turts can swim all over the place. They love the freedom of being able to swim and honestly it is very good exercise for them. When they want a break, the just climb in or on the turtle log I have and take the break. Otherwise they like to be in the water swimming around, it is when they are at their happiest.
