I was interested in getting a Northern Red Bellied Cooter and I have an RES already. I was curious if it is safe for the Turts to be housed together? Do they share similar demands such as food, water temp, Basking temp? ETC.

Living conditions and food are the same for pretty much all the aquatic turtles. But you should know that RES are territorial by nature and can be aggressive to other turtles living with them in the same tank, whether they are RES or other species. Usually if your tank is large enough for two turtles no problems should arise.
