I have had momo for almost 2 weeks now, she eats very good and always begs for food, the second i wake up she is at the tank swimming like crazy for her food.

Her schedule so far has been

about 8 pellets everyday around 12:30pm and green leaf lettuce everyday around 8 pm

Then carrots once a week normally mondays
and thursdays sweet potato for shedding(doesnt like blueberries)

My question is if I am feeding her too much or too little?

When I give her carrots its shredded baby carrots so its little mouth size pieces or smaller and i giver her maybe 8-10

When i give her sweet potato its mouth size pieces and i give her maybe 5-6.

And lettuce i normally grab a small hand full and tear it up, the pic below is her separate tank where she eats her food. The amount of lettuce in there is about 1/2 of what i give her. Is that to much? She ate it all before but now that i feed her in a new tank she only eats half and if i put the other half in her big tank she eats the rest.

Without knowing the size of your turtle, it's harder to answer. But if your turt is at least 4'', then it sounds okay to me. I would reduce the pellet intake to every other day. But that's about it. But let us know the size of your turt to be sure.

The amount sounds fine to me, I agree with untsmurf about pellets every other day, but you might vary the veggies and greens a bit. I know that the turts usually love to get an aquatic plant or two in the mix. Spike will ignore pellets in favor of Anacharis now.
