I have had my RES for over 2 years now and guess he is around 3. He has always been a big eater chomping down his pellets, freeze dried shrimp, feeder fish and crickets but when it comes to veggies its a whole other story.
He loves tomato and beets but when it comes to anything else (aspecially greens) he is a nightmare! He also will not eat any fruit.
I've tried coating his veggies in freeze drid shrimp dust, stuffing them (shrimp) in to the veggies (such as cucumbers) , soaking lettuce and other vegetables is tuna water but he will tare the vegetable apart with his mouth and paws, eat the protein and leave all the veggies untouched or chew them up and then spit them out.

I know he needs more than protein, pellets, tomato and beets to be healthy but I have run out of ideas!

Anyone have any other suggestions?

Have you tried a variety of greens? A lot of times, it just takes that one kind of green to get them started on loving them. For my turtle, it was dark green leaf lettuce when she was about 2.5" and she just chows down almost anything. Mind you, we have our list of foods she won't eat, but she eats the basics: lettuce, berries, and carrots, so we are all good.

Try out a variety of lettuces, my suggestion, go to the grocery store and find the salad bar. A lot of the big grocers have them. Get a little bit of everything, literally, and just try it all out, though not all at once. You want to see what he likes and what he doesn't like. So, get: green leaf lettuce, red leaf lettuce, dark romaine lettuce, dandelion greens, basil, carrots, apple, mango, tomatoes, strawberry, blueberry, and sweet potato. That's the list of standard foods. The carrots, apple, and mango should be cut into thin strips that look like worms, it kind of incites a hunting response. The lettuce, I recommend giving it in no bigger than shell-sized pieces, so it's not overwhelming. The sweet potato should be boiled/cooked and cooled before giving that.

Hopefully one of those will get him eating the good stuff. Also, prior to doing this, don't feed him ANYTHING for about 4-7 days. He'll be so hungry, he won't care what's going in his belly. They can easily make it a week without food, so you aren't starving him. During the no-protein period, you can start at any point with the greens, but often they'll hold out the whole week expecting that eventually you'll give in.

i would try adding some aquatic plants, that way they will always be available to him and you dont have to worry about the food staying in the water, it might invoke some natural instinct for him/her to start chomping on some plants

i have tons of fake plants in my tank, but whenever i put any aquatic plant my turtle knows exactly where it is amongst the plastic and tears and eats it up

Mine wouldn't eat any greens either, he loves sweet things though - strawberries, bananas etc. So everytime I went to the supermarket I would buy a different type of lettuce and see if he would even touch it. I finally found something he'll eat (Romaine lettuce). haha. Although I have to say he's still not a big fan. Some is better than nothing though.

Just keep trying - sometimes it can take a reaaaaaaaaallly long time. Don't give up hope! It's not called the tough love method for nothing.

I wont give up on him :)
I read the sticky on the jello shots and made some, I'm gonna see if those work
I am sure him eating non pureed vegetables is probably better for him but at least he'll be getting them in his belly in some form

Maybe one day he'll outgrow of his picky habits
