I will begin feeding my turtles vegetables everyday. So when I feed them pellets, should I still give them a "head's" amount or should I decrease the amount of pellets that I give them?

Only decrease the amount of pellets if you give them a high protien treat like fish. Veggies shouldn't affect how much pellets you give.

Also, I have three 4.5" long turtles. I have bought some green leaf lettuce form them. How much of the lettuce should I feed them everyday?

My rule of thumb on the lettuce is a shell-sized piece or two every day. You'll know if you are overfeeding (or if one is hogging it all) as their poo will get liquidy. I haven't had a problem with the shell-sized pieces I give to my turtle, though.
