Is it safe to lightly dust the veggies for my turtles with finely ground up human multivitamins occasionally?

I think it's better to feed reputable brand pellets instead. However, since you said
"occasionally", it should be alright.

Too much vitamins can cause illness, same in humans (hypervitaminosis).

It has been done in the past with a calcium supplement, I'm not sure of other vitamins. However, you shouldn't have a difficult time buying a reputable supplement for your turtle.

If you're feeding a varied, balanced diet, your turtles shouldn't really need a vitamin supplement on their veggies...
